Sto-toah bahf (Akimel O’odham for White Beans)

Ingredients:
 2 lbs White tepary beans (cleaned, rinsed & soaked)
 ½ cup Onion (quartered or diced)
 1 Dried red chile pepper (whole) OR 1/2 cup chopped carrots and/or celery.

Sort and rinse beans.

Add water to cover plus 2 to 4 inches.

Add onions & chiles or carrots.

Bring to boil for 30 minutes.

Reduce heat, cover & simmer for 4 to 6 hours (or until tender).

*Also great when cooked in a Crock Pot!
