Creamy Potato & Wild Rice Soup

 4 Bacon strips, chopped
 1 Medium onion, chopped
 2 cups Red Lake Nation Wild Rice, washed and fully cooked
 4 cups Chicken stock
 2 Cans of Cream of Potato Soup
 2 cups Half-and-Half
 1 cup Mushrooms, sliced
 2 cups Shredded cheddar cheese

Sautee bacon, onion and mushrooms in a large pot. Once onions are translucent, add chicken stock, rice and cream of potato soup. Bring to a boil and simmer 15-20 minutes. Turn off heat and gently add half and half and cheese.
